Recipe for Cider

Procure apples full grown and sound, wash them clean. Grind the apples with a cider press or by hand. Put the ground apples in a cloth and press out the juice. Pour the juice into a wooden vessel fit for fermentation. Add yeast to the juice and cover the vessel to keep out impurities. Let the juice ferment for a number of weeks or until the desired fermentation is attained. Once the fermentation is done, pour the cider into another vessel for clarification. Allow the cider to stand for several days until the sediment falls to the bottom. Carefully decant the clear cider into bottles or barrels for storage or consumption forthwith.
